How to make Ghanaian ETO I Mashed Plantains I Nanaaba’s Kitchen✔

My love letter to my vegan and vegetarian subscribers and supporters. My version this classic Ghanaian Eto/Oto (ripened plantain mash) is moist, packed with ingredients that a nourishing, flavorful and satisfying! Because it is a vegan version, I loaded it with a healthy and generous amount of protein rich roasted peanut butter and roasted peanut crumble. Please substitute the peanut with roasted almonds or pecans if you are allergic to peanuts. Also, the dawadawa (locust bean) is an optional ingredient that may be completely omitted without loosing any richness or flavor.

INGREDIENTS:

4 perfectly ripened plantains
1/2 a shallot
1/2 red onion
2 small red Serrano chili (may substitute with habanero/scotch bonnets/ Petrie bells/jalepeno)
1/4 cup roasted peanut butter
1/4 cup roasted peanuts
1 teaspoon dawadawa
Salt to season
4 tablespoons palm oil
1 Scallions chopped for garnish
