Ingredients:

1. Rice & Peas
~ Red Kidney Beans (16 oz.)
~ Brown Rice (4-5 cups)
~ Coconut Cream (Brand Used: Grace Pure Creamed Coconut)
~ Lawry’s Seasoning Salt (1 Tablespoon)
~ Garlic (1 Tablespoon)
~ Thyme (6-8 sprigs)
~ Scallion/ Green Onion (3 Stalks)
~ Butter (1 Tablespoon)
~ Scotch Bonnet Pepper (Optional, add based on Spice Tolerance)

2. Escovitch Fish
~ Black Pepper (1 Teaspoon)
~ Salt (1 Teaspoon)
~ Olive Oil (1 Cup)
~ Allspice (1 Tablespoon)
~ Garlic (1 Teaspoon)
~ Seasoning Salt (1 Tablespoon)
~ Thyme (8-10 Sprigs)
~ Onions, Carrots, and Green, Yellow, and Red Peppers
~ Vinegar (1/4 Cup)

3. Steamed Cabbage
~ Cabbage (2 heads)
~Peppers (Green, Yellow, Orange, & Red)
~ Carrots
~ Butter
~ Seasoning Salt
~ Garlic
~ Black Pepper
~ Thyme

4. Plantain
~ Ripe Plantain
~ Oil

5. Carrot Juice
~ Carrots
~ Grater
~ Nutmeg
~ Vanilla Extract
~ Sweetened Condensed Milk
~ Ice
